These clean eating Zucchini and Yam Pancakes were so simple and so delicious. So yummy! Very comforting and no guilt.
Clean Eating Zucchini and Yam Pancakes
- 2 large organic eggs
- 1 large zucchini, grated
- 1 medium yam or sweet potato, grated
- 1 tbsp almond meal
- 1 tbsp coconut flour
- red pepper flakes (optional)
- Himalayan Salt and Pepper to tastse
- coconut oil (for cooking)
Heat coconut oil in a skillet. I love my cast iron.
Beat eggs in large bowl, add the next 4 ingredients. Add salt, pepper, and red pepper flakes to your liking.
Spoon about 1/2 cup of mixture into a pan to form patties, but not too thick. Cook for 3-5 minutes on each side until golden and crispy.
Makes about 6-8 cakes.
