A Simple Answer…What I eat

I want to give you some encouragement today.  I get asked on a daily basis “What do you eat?”.  So, I’m going to include this video that I made and my wish for you is that it helps you.

We are all on different paths, we have all tried fad diets that have failed. When I started eating clean almost two years ago I really didn’t know what it meant but my intuition told me it was right. I was frustrated, I had tried everything, I thought I knew everything.  I would sometimes get to my goal weight, but only to stay there for a very short time. The bottom line was I realized that I could not exercise my way out of a bad diet. Skipping meals was hurting me, but being afraid to consume too many calories kept me from eating properly. I also wanted to start eating organic, but really didn’t know where to start. I began researching, learning, reading, asking questions, following successful women who had their eating and fitness under control.

I looked into several meal plans.  I made a simple grocery list that included organic lean proteins, vegetables, fruit and healthy fats.  I still use this to this day.  I’ve added items to it, but it basically is the same. I learned to add fresh herbs and spices to my food.  I stopped consuming sugar, I stopped eating processed foods. I started eating more frequently and I started simply eating. Eating clean and as organic as I could.

I make a salad at least 2-3 times a week. I have to say it’s one thing I am very good at. There are some tricks I have. I tear my greens and never cut them.  I put them in the basket of my salad spinner inside the outside bowl and I soak them with water that is not too cold and not hot.  I rinse the greens well, spin and place them in the fridge while I chop the other ingredients. Sometimes I get fancy, sometimes I don’t.  In this photo, I used several types of greens.  Play around and have fun with your choices.  Don’t be afraid to try new greens, they are all good. I added cabbage, dried figs, zucchini, steamed asparagus, toasted almonds (no oil), red pepper, steamed broccoli and fresh onion.  Let the steamed veggies and almonds cool just a tad and add them. Toss and serve.  Do not dress your salad until it is on your plate.  Make a lot.  The leftover salad undressed can be stored in an airtight container in your fridge for several days with out turning or spoiling. It makes great lunches for the next day or saves you time for dinners later in the week.

 

Here is another one a little less fancy. Just use your imagination and what you have on hand. Hard boiled eggs, grated beets, grated carrots, a little feta cheese, an apple, cabbage, and even grilled onions. The key is in the spinning!

Here is one of my favorite dressings I make often. I usually blend this in my Magic Bullet, which is an amazing little affordable gadget.

Creamy Garlic Dressing

1/2 cup extra virgin olive oil

1/2 cup apple cider vinegar

3 to 5 cloves garlic

3 tbsp fresh lemon juice

1 tsp Himalayan salt

1/2 tsp dijon mustard

1 tbsp unfiltered honey or raw agave nectar (dark)

Throw everything together and whisk or blend. It makes a lot and stores well in the fridge.

 

So, I encourage you today to make a big fun salad for dinner. I encourage you to eat clean.  I encourage you to eat clean for three weeks. You will not believe the difference in how you feel, how you sleep, how much energy you have, and how focused you become.
