Clean Eating Brussels with Cranberry, Lemon and Apple

Shelly’s Brussels with Lemon, Cranberry and Onion (Please Share 🙂

Ingredients:

  • 1-2 tsp olive oil
    1 red onion halved and sliced thin
    10-15 medium sized Brussels Sprouts washed, stems removed and sliced thin
    1 green apple, washed, cored and chopped
    Juice of 1/2 lemon
    1/4 cup unsweetened cranberries
    Himalayan Salt and Pepper to taste

Method:
Heat olive oil in skillet. Add onion and cook until soft and fragrant. Add brussels, apple and lemon juice. Cook until tender but not mush, a bit of browning is okay. Add cranberries until heated though and serve.
