Clean Eating Chicken Soup with Parsnips

What a fun comforting recipe.  I made this up as I went last night and it turned out delicious.  It was fast and simple. The parsnips gave the soup a great flavor as they are somewhat spicy.  The parsnips also added the perfect amount of thickness as they started to breakdown. I did use what vegetables I had on hand, but you could use what ever you like. Super easy, super clean, comforting and delicious. Fast too.

INGREDIENTS

2 tsp olive oil
5 cloves garlic minced
1/2 sweet onion chopped
3 carrots sliced evenly
2 chicken breast cut into 1 inch chunks
4 cups chicken broth
2 cups parsnips( about 3) sliced
1 red bell pepper chopped
3 cups baby kale
1 tsp celery salt
2 bay leaves
Himalayan Salt
Pepper

DIRECTIONS

Heat oil in a good size stock pot. Add garlic, onion and carrots. Cook until carrots start to soften.
Add chicken breast and cook through, until no longer pink. Add parsnips, red pepper and kale, stir. Add chicken broth, celery salt, bay leaves, salt and pepper.
Bring to a boil and reduce heat to a simmer until parsnips are soft and start to break down.

TIPS

Add whatever vegetables you have on hand.
