Clean Eating Shiitake Mushrooms and Spinach
Sushi is one of our favorite meals. My husband and I have been having this dish at our local Sushi Bar for years. Clean Eating Shiitake Mushrooms and Spinach is very easy to make and delicious. This dish is very clean. I do use grass fed butter which adds more flavor than olive oil.
This dish can be used as a side dish or served over brown rice with chicken, pork, fish or beef.
2 tbsp butter
3 tbsp soy sauce
2 tbsp fresh lemon juice
2 cups mushrooms ( shiitakes)
8 cups of fresh spinach
In a large skillet heat butter, but do not brown. Add the soy sauce and lemon juice. Heat through until simmering.
Add shiitakes and stir to coat with broth. Add spinach and cook until wilted but still bright green.
Can be served over brown rice or just simply as a side dish.
You can use low sodium soy sauce as well.
