Clean Eating Shrimp Stuffed Sole
I came up with this recipe after researching several sole recipes. We love Petrale Sole, but often times it’s not very filling. It’s a white fish, very mild in flavor and when cooked properly it’s very flaky. This recipe will be a great addition to your clean eating recipes.
Living on the Oregon Coast, we are very blessed to have fresh fish available to us at all times. If it is not gifted to us we usually purchase our fish at our favorite fish market called Local Ocean. They sell local fish, date the catch and inform you as to what boat was responsible for the catch and how they caught the fish. Also a lovely restaurant with great food, local fare and good service.
Ingredients (Serves 4 nicely)
1 1/2 – 2 pounds of Petrale Sole
1/2 pound baby shrimp (cooked)
Spray oil (I like organic)
1 tbsp olive oil
1 small onion finely chopped
1 small carrot finely chopped
4 cloves garlic minced
1/4 So Delicious Coconut Creamer Original, not flavored (does not taste like coconut)
1 tbsp fresh tarragon minced
1 tbsp juice from fresh lemon
1/8 cup panko bread crumbs
Himalayan Salt and freshly ground pepper
Preheat the oven to 375 degrees. Spray a baking dish with spray oil to coat. Heat the olive oil in a skillet. Add onion, garlic and carrots, cook until soft, about 10 minutes. Add shrimp and saute for a few more minutes.
Remove mixture to a food processor, I chose my Vitamix. Add So Delicious Creamer, lemon juice, tarragon, panko and blend until slightly chunky and not fully pureed.
Place some stuffing on one half of each sole filet. Fold the other half over the stuffing and transfer to the baking dish.
Add salt and pepper on top. Bake covered for 10 minutes and uncovered for 15 minutes or until flesh is cooked through and white and the stuffing is hot.
You can put your own spin on the spices with this recipe. The nice thing is that the creamer and the panko blended with the other ingredients makes the stuffing thick and workable without being runny.
