Check out my delicious coconut encrusted yam fries!
- 2 large Yams
- 2-4 egg whites
- 1 cup unsweetened shredded coconut
- Himalayan Salt
- Red Pepper Flakes
- Coconut Spray Oil
Heat oven to 400 degrees.
Line cookie sheets with parchment paper and spray lightly with coconut oil.
Mix coconut, Himalayan Salt and red pepper flakes.
Cut yams into fries – about 1/2 inch thick is good.
Dip fries and coat with egg whites.
Coat with coconut mixture.
Place fries on parchment, do not over lap.
Bake for about 40-50 minutes, watch not to burn. No need for turning. Middle rack is best.
