I love this recipe. It is a great alternative to a dinner salad. It pairs nicely with just about any protein. It’s a great hit at parties too.
1 1/2 pounds broccoli
3 cloves garlic, mashed
2 tbsp lemon juice
2 tbsp rice vinegar (seasoned vinegar contains sugar, check your labels)
1/2 tsp dijon mustard
1/3 cup olive oil
Red pepper flakes to taste
salt and pepper to taste
1/4 cup toasted slivered almonds
Blanche broccoli, drain 30 min. Cut broccoli in quarters stem side up. Uniforms the broccoli. Don’t pay attention to the flower part. Cut stems as well. While your broccoli is cooling, toast your almonds.
Mix remaining ingredients together, whisk in oil and add the hot toasted almonds. Add salt and pepper.
