I saw these spirals recently but they were steamed. I decided to try them pan fried with avocado oil instead. I thought the texture would be better and the hot heat would slightly brown them and bring out the sweetness. I was right. They were perfect. A huge hit with my husband.
Clean Eating Basil Spinach Meatballs over Sweet Potato Spirals (Makes 12 meatballs)
- 1 pound ground turkey
- 1 pound chicken sausage ( I used AppleGate Spinach and Feta )
- 1 egg
- 2 tbsp almond meal
- 3 cloves garlic minced
- 1/4 cup fresh basil chopped
- 1 cup baby spinach
- Red pepper
- Himalayan Salt
- Fresh ground pepper
- Avocado oil for browning meatballs
Preheat oven to 400 Mix all ingredients and form 12 balls. Heat avocado oil in skillet and cook meatballs, just to browning on each side. Place parchment on a cookie sheet and bake meatballs for 20-25 minutes.
Sweet Potato Spirals
- 2 large sweet potatoes or yams peeled
- 1 tbsp or less Avocado oil
- Himalayan Salt if desired
Cut potatoes lengthwise into 1/2 -3/4 inch pieces. Using your vegetable peeler, peel strips or spirals off the edge of the potato slices.
Heat olive oil in a pan on med high. Add potatoes and cook hot and fast until slightly tender – do not let stick.
Serve meatballs over the sweet potato spirals and garnish with fresh cut basil.
